A number of hornworm / Sphinx moth possibilities...
Here's an advanced search of BugGuide for Hidalgo Co, TX using "sphinx"

http://bugguide.net/adv_search/bgsearch.php?user=&taxon=&description=sphinx&location%5B%5D=TX&county=Hidalgo&city_location=&adult=&immature=&male=&female=&representative=

a Sphinx moth caterpillar
Probably one of the sphinx moth caterpillars and definitely one of the late instars. What plant was it found on? that may help with identification. I doubt this is a Tobacco or Tomato Hornworm (Manduca sexta and Manduca quinquemaculata)found on tomatoes and tobacco. Probably one of the Sphynx species if I were to guess. I always seem to have trouble with these various "hornworms" because of the great variation found, even in the different instars.

Sorry for the slow response!
Sorry for the slow response! My grandmother says it grew on a esperanza shrub but was eating leaves from a jasmine plant.

Potato bug or tomato worm
