I work for a family stall at the Saskatoon Farmer's Market every Saturday morning with cousins and my sister for our Grandma and Uncles stall. My cousin noticed this little guy and screamed when it hopped on her foot. Not sure if it was brought into Saskatoon with us, or another farmer's market vendor, or just has been really stealthy living in the city.

You're right, it is a camel
(a.k.a. cave) cricket, family Rhaphidophoridae. Someone else may be able to take the ID further.
