And you're absolutely right. I chased this thing round and round a ten square foot patch of ground and must have taken thirty or more pictures before I finally accepted defeat.

Size?
If the specimen was around 1" or more, then it is certainly Dasymutilla klugii.

There are a few smaller species in Texas such as D. melanippe, D. nupera, and D. klugioides that are similar.
