You 'are' what you eat....
I think the theory goes something like this: Katydids that mature late in the season are taking in less chlorophyll, and more of the other leaf pigments, resulting in coloration like this. This bush katydid is a female in the genus Scudderia, and probably S. furcata. That is the most abundant species, certainly.
