Could be that this one is just relatively freshly-molted and the pigments haven't set yet. Anyway, good bet it is another Mediterranean mantis. Moving to that page.

Mantids can have red eyes and vary a lot in color, sometimes with light colored bodies. I'm not sure which one that is, but somebody will probably know. I think I saw similar in New Mexico.
