Id be inclined to agree
that it's a very unmarked individual of
Pieris marginalis
. Especially likely if you were up in the hills, as apposed to down low (a little more exacting location is helpful, since Iron County is large and varied).

I'd say Pierinae
The Whites, close cousins to the Coliadinae - yellows are, well, yellower, and the pale female forms are usually spotted, not like this almost unmarked individual.
I don't know anything about Utahn butterflies, but I'd ask someone who did to take a look at the Margined White,
