Ignorance gone!
We have a photo of a Rhinocerus Beetle from Austin:

 
Ox beetle
I am almost certain they are ox betles

Nice find!
All I can say is, it's a scaraboid but apparently not a lucanid (stag), since they have fleshy bumps on either side of the anus that form a vertical slit. All other scaraboids have a transverse slit, which I think I can see in your photo. It's probably a large scarab such as a rhino*cerus beetle or hercu*les beetle, although I'm ignorant about whether they range into your area.

Would it be an ox beetle? I have ox betles grubs they are smaller than the one i found here. Dynastes Titiyus would be great!!!


 
Why not?
I did a little research, finding that Ox Beetle grubs reach about 3 inches in length. I found a Web site on rearing beetles, with a page on Ox Beetles. It shows a grub that is similar to yours.

 
Gulf States
Our BugGuide range map on the Data tab shows BugGuide records for Rhino Beetles from most of the Gulf States (Florida, Alabama, Mississippi, and Texas) as well as Arizona.

This would be a great chance to try some rearing!
