My daughter found this white grasshopper on the same plant where she found a pink mantis. It seems thicker than most of the grasshoppers we get around here. I was wondering what species it is.

Not 100%, but
I would lean toward Gray Bird Grasshopper (Schistocerca nitens). This is a nymph, probably last instar. It is possibly very recently molted, which would be the cause of the white coloration. It's color may darken to a tanish brown or green, or any other color in the rainbow given that grasshoppers have amazing variability in nymphal coloration (that's a little exaggerated, but just a little). Then again, it may remain white in color until adulthood, when it will be gray/brown.
