Here's a photo of the eggs. I brought them into the house and spritzed them with water every few days. They just hatched and I don't know what to feed them. Hope they don't eat each other. I gave them some leaves.

Now that Eric identified it as a Microcentrum, this automatically makes it a Greater Angle-wing Katydid (Microcentrum rhombifolium), the only species of Microcentrum in Utah.

What do they eat?
What do these guys normally eat as adults? Other smaller insects? or do they have a primary type of plant diet?

They sure were adorable. I know some survived because I saw some big adults in our yard later in the year.
