Size: approx. 2.5"
There were lots of these good-sized caterpillars on the indigo bushes near Towne Pass. I have tentatively identified them as a Hemileuca species, but it I can't find any pictures online that exactly match.

My guess would be-
H. burnsi

We would agree with Hemileuca
It looks a lot like our eastern H. maia. Arizona Moths list a Tricolor buckmoth (Hemileuca tricolor) [ MONA 7727 ] with Foodplants that look like legumes:
Littleleaf paloverde (Cercidium microphyllum)
mesquite (Prosopis juliflora)
catclaw acacia (Acacia greggii)
but unfortunately no image of the caterpillar.
