Do you happen to have any to cut open? The freely-floating larval chamber would point to D. simulata.

I'm not sure how the larval chambers would compare with galls that are old (occupants have exited).

Another reason I lean towards D. simulata is the host, Q. durata. Ron Russo (2006) lists D. mamillana only on blue and scrub oak. D. simulata I know is on durata.

Let me know what you think....

The 3rd and 4th images in this series seem to be leaf galls. Am I right? I'm going to unlink them and comment separately.

 
Yes.
After I thought about D. simulata too after I suggested D. mamilliana, but was unsure. I have all 4 still, they were all clearly stem galls, I'll cross section a few of them and take photos.
