I saw dozens of their little eyes poking out of the sand when the waves were washing back into the ocean

What about Emerita benedicti?
They're both in your area and I have no idea how to tell them apart. Certainly that genus.

I'll move it
Just to be safe. I saw Gulf of Mexico as the range for Emerita benedicti, so I thought that ruled it out. But after looking into it more it looks like you are right, and it is in range for both

I thought it was just in the Gulf of Mexico too
When I first heard of it, but there is a record from South Carolina on WoRMS, my go to site for marine species taxonomy and ranges.
