Huge mole-like insect in the mud. Some kind of larvae? - Gryllotalpa gryllotalpa

Size: 3.5"
I have found several of these under rocks and in the soil around our property. Looks like a cross between a mole, a crayfish larvae and a dragonfly larvae. It has huge front legs for digging that you can't see well here.
