I spotted this mantis near a mailbox in our parking lot. Since it was in danger of getting stepped on I moved it along by lightly touching his back leg. I did this twice and on the second time it squirted out two jets of liquid. Not sure if it was just a coincidence that it peed at that moment or if it was sending me a message to leave it alone.

Nope.
This is a European mantis. Stagmomantis females are never fully-winged as far as I am aware. Plus, note white speckles on inside of front legs.
