Female Prionus californicus?
"Large" is kind of subjective... There are 8 species of Prionus Longhorns in Colorado.
It looks like a female
Prionus californicus
to me, and a search indicates that this is also found in Colorado.

I never measured it, but seem to remember about 5cm. Don't take my word on that though, I've never been good at estimating length.

Prionus types in Larimer County
Here's the
Prionus
species list for Larimer County:
Prionus californicus
Prionus integer
Prionus palparis
Prionus fissicornis
Prionus emarginatus
Give those a gander and let me know what you think.

I think P. californicus
Thanks for the info. It is definetly not integer, fissicornis, palparis, or emarginatus. P. palparis isn't in the guide, but I found an image on the wider-web, and it's not right. Thanks!

Size
The
Prionus californicus
is the largest Longhorn found in Colorado. It measures between 3.5 to 5 cm. So, if it was actually 5 cm long, a female
P. californicus
is a pretty good candidate.

I'm certain that you'll find your beetle...
... somewhere in genus Prionus. This can be a tricky group, with several sub-genera, so I don't dare try to get too specific. Just for illustration, here are a couple of random examples:
