Size: about 3 inches
This is a moth caterpillar. The genus is probably Datana.
Foraging on Rhus microphylla (Littleleaf sumac)

Datana, yes,
but not likely ministra way down in southeastern Arizona

 
I looked at it wrong
I just noticed this specimen does not have the yellow or orange band behind the head as in my examples. Also the red spots. You are right, not ministra.

Googled Datana
Datana ministra.Searched for it and found it on Wikipedia. Matched this and the picture I snapped today perfectly.

I'm a novice but I had an opportunity to observe and ID this caterpillar recently. It devours sumac and the red stripes become black with age (molting).
