Size: 1cm
Found this and one other grub under a rotting log. I would like to keep them until maturity. What would I need besides dirt and a piece of wood? Thanks in advance.

If the grub was in the dirt,
chances are it's a root-eater. If it was a wood-eater, it would most likely be in, not under, the rotting log. I have yet to rear a root-eating grub, but if you gather whatever roots were present at the site, along with some soil, you might succeed in rearing it.

I dug some of the actual soil it was in along with some of the dead leaves and plant matter. I will search again tomorrow to make sure I gather enough food for it. Both of the grubs I found were in the dirt under the log, so maybe I have what they need. Thanks again, and if I manage it, I will add to these pictures.

 
Root feeder
Interesting larva, nice photos. Where I live, UK, I know of two root feeders with the same behaviour, Melolontha melolontha and Amphimallon solstitiale. Both move along as if carrying a sleeping bag behind, see more in my Gardener's larva guide.
I did manage to have one of them pupating once by potting some grasses, just a guess, and leaving it in the soil. I'm not sure if it ate anything but when I next looked it had pupated, a bit of luck there.
So my guess is that it will belong to the Subfamily Melolonthinae - May Beetles and June Bugs.
Compare it with a "crawly back" and with this one too.
