This is probably Euclea delphinii, but may be Euclea nanina.

I asked here about E. nanina but got no response. In my comment, the second of the 4 numbered links is currently not working but I remember the photo having a mostly green forewing, like the image of delphinii in the fourth link.

Although Dalton State College gives a range extending to Texas for delphinii, Covell's Guide gives Louisiana as the westward limit, and the only Euclea species on these Texas lists (1, 2) is nanina.

Until we know how to distinguish these species, I think it would be safer to put all Euclea photos taken south of North Carolina on the genus page.

I did not check the range on this one, except to see that we already had an image from Texas on our data map (from October). I think putting this at the genus level is a good idea.

This is a Slug Moth Caterpillar
quite possibly Spiny Oak Slug (image below) - at any rate, this group of caterpillars has stinging spines, so I hope you didn't handle it.

That's probably right, they definitely look similar. And no, I didn't touch it. I know better than that :-)
