Weird bug I can't find anywhere....what is it?! - Phyllopalpus pulchellus - Female

Size: 1 inch
When I saw this bug the first time he was younger and smaller and was a bright pink with bright yellowish green jumpy legs and long antennas. It has black pincer-like things that kind of look like they get bigger and smaller like they are elastic or something. I've never seen anything like it. It does not have wings but can really jump. I just want to know what type of bug it is and what it is called and what it eats, etc. I could not find it anywhere online. I could not even find anything similar to this bug....someone help me out, please!!

Thank you so much!! I looked online forever and went through a huge list of crickets and grasshoppers in my area and it was not there....I couldn't find one that looked anything like it. I'm glad to finally know what it is. :)
